Sac (large convex domed griddle)
The defining piece — the traditional Turkish cooking surface. Nothing else produces authentic gozleme. A serious investment — treat it well.
Large wooden rolling pin
For rolling the dough to paper thinness.
Large wooden table / dough board
For stretching and filling — minimum 1.5m x 1m. The theatre of the operation happens here.
Spatulas and tongs
Bain marie
For holding pre-cooked meat fillings above 60°C.
Small bar fridge
For cheese and perishable fillings.

Gluten in dough, dairy in cheese, eggs if used in dough.
