Use this checklist to plan your market stall. Tick off items as you acquire them, and use the notes space to record your own questions, suppliers, and costs.

Mexican Food
Header product — groups all Mexican dishes. Log sales here for quick entry or against a specific dish for finer tracking.
Tacos
Soft corn or flour tortilla with choice of protein, salsa, cheese, sour cream, and guacamole.
Burritos
Large flour tortilla wrapped with rice, beans, protein, salsa, cheese, and sour cream.
Quesadillas
Flour tortilla filled with cheese and choice of protein, grilled until golden.
Nachos
Corn chips with melted cheese, beans, salsa, sour cream, jalapeños, and guacamole.
Loaded fries (Mexican style)
Fries topped with pulled pork or beef, cheese sauce, jalapeños, and salsa.
Churro (side)
Remove if not offering — or run as a separate pack.
Agua fresca / Mexican soft drink
Seasonal fruit water or imported Mexican drinks.

Beef mince (for taco/burrito filling)
Season with cumin, paprika, garlic, oregano.
Pulled pork (slow-cooked)
Prepare in advance — reheat on site above 60°C.
Grilled chicken (marinated)
Chipotle or lime/garlic marinade.
Chorizo (sliced or crumbled)
Black beans (canned or cooked)
Vegetarian protein — season with cumin and garlic.
Refried beans
Corn tortillas (15cm)
Naturally gluten-free — keep separate from flour tortillas.
Flour tortillas (25cm, for burritos)
Contains gluten — must declare.

Contains gluten.
Corn chips / tortilla chips
For nachos and sides.
Jasmine rice or Mexican rice

Tomato, onion, coriander, lime, jalapeño.
Tomatillo salsa verde
Optional — green salsa.
Guacamole
Avocado, lime, coriander, onion, salt.
Sour cream
Dairy — must declare.
Shredded cheese (cheddar or Mexican blend)

Cheese sauce (nacho)
Dairy — must declare.

Temperature control compliance
Proteins above 60°C, dairy below 5°C at all times.
Gluten allergen declaration
Flour tortillas contain gluten — must be declared. Corn tortillas are gluten-free but cross-contamination risk must be communicated.
Dairy allergen declaration
Sour cream, cheese, and cheese sauce contain dairy — must be declared.
Allergen labelling compliance
Gluten and dairy are primary allergens — display on signage and packaging.
Electrical safety compliance
If using generator.
