On-premises or temporary liquor licence
Mandatory for selling alcohol for on-site consumption. Temporary licences available for events — apply through VCGLR in Victoria well in advance. Processing times can be significant.
Responsible Service of Alcohol (RSA) certification
Mandatory for every person serving alcohol — no exceptions. Must be current. This is non-negotiable.
Market organiser approval
On-site alcohol consumption requires explicit market organiser approval — confirm well before booking. Not all markets permit on-site consumption.
Age verification compliance
Must not serve persons under 18. Must request ID if age in doubt. Mandatory RSA signage must be displayed at all times.
Trading hours compliance
Licence will specify permitted trading hours — must not sell alcohol outside these hours under any circumstances.
Intoxication compliance
Must not serve intoxicated persons — a core RSA obligation. Refusal of service must be handled respectfully and safely.
Public Liability Insurance
Higher coverage recommended for bar operations.
Temperature control compliance
Wine and beer below 4°C.
Food Business Registration
Required if serving food alongside drinks.
